Encyclopedia of Common Natural Ingredients Used in Food 3e

The Encyclopedia of Common Natural Ingredients, Third Edition is needed to update and expand the Second Edition, providing an accurate and current reference source on natural products for the growing number professionals who need a comprehensive text to which they can refer. Given the phenomenal growth in the natural products industry over the past 5 years, the intended audience for the Third Edition of the Encyclopedia has grown commensurately. 1. The number of additional items will be 12-15, the majority of which will be Chinese herbs. But the the new edition will be about 20-25% longer due to more updated information as well as more extensive indexing. A good extensive index will allow the reader to easily locate different types of ingredients and other information (emulsifiers, moisturizers, antioxidants, etc.) in addtion to individual chemicals, names and terms. 2. There will be a short chapter on "How to use the Encyclopedia." 3. The authors will extract the relevant information from the Introduction and Glossary and place it in a separate chapter that will describe the "Production and quality control of natural ingredients." 4. Other changes will include a separate "Part(s) Used" category as well as updating the use category of "Health Food/Herb Teas" to more appropriate words to reflect current dietary supplement and/or complementary/alternative medicine usage.
